Chipotle’s Guacamole

Here’s a recipe from Chipotle Mexican Grill on how to make their signature guacamole, it’s a pretty standard guacamole recipe, but it does use a ton of Serrano chiles. Surprisingly, there’s no garlic, tomatoes or seasonings, so it’s a pretty basic recipe but still good none the less. For a complete chip and dip experience, serve guacamole with tortilla chips that have been tossed with lime juice and a sprinkling of salt, a signature at Chipotle Mexican Grill.

Ghost Mango Chutney

I found this recipe online to make a Ghost Pepper / Mango Chutney that would go great on pork or chicken. You can add or decrease the amount of Ghost Pepper that you use to taste, as this will make for a spicy sauce.  A Ghost Pepper or Bhut Jolokia is about 6-10 times stronger than a Habanero, just to give you something to think about.

The other day, I did a chicken on the rotisserie, which is a great way to cook a healthy meal as all the fat drips right off and away from the meat, drippings which make for an excellent gravy that’s quick and easy to make. Mashed potatoes go great with barbecue chicken, so I decided to whip up some quick gravy with what I had in the cupboard.  You can sub-out the chicken drippings for beef or pork to make fresh gravy any time and you can see how easy it is to make once you know the basics. Honey Bacon Habanero Glazed Wings

You can never go wrong with Hot Wings, the hotter the better.  I seen a recipe where they coat the wings in a spicy, light breading before being glazed with the sticky hot sauce. These wings are coated in a paprika spice blend, then glazed with Honey Habanero sauce, and finished with crisp cooked bacon.

Siracha Powder

So I just seen this technique to make your own Sriracha powder.  Basically it’s just dehydrating the Sriracha until it clumps together and then you can crush it up to give you a super intense powder that goes well on top of everything.  It does get very spicy as all the water is removed from the sauce leaving it extremely concentrated.
