After spending my weekend watching Swamp Wars, which is a great show, I really want to try alligator. I found a few places online, like Gatorama.com where you can order it and have it shipped right to your door. I’ll have to pick up a few pounds of rib and tail meat and give this recipe a try.
Ingredients:
- 2-3 lbs Alligator meat, cubed
- 3 Tbsp Lemon Juice
- 3 Tbsp Lime Juice
- 1/2 cup White Wine
- 1 Tbsp Cilantro, minced
- Salt and Pepper to taste
- 1 Tbsp Cajun Seasoning
- All-Purpose Flour
- 2 Tbsp Olive Oil
- 3 Tbsp Garlic, minced
Directions:
- Toss alligator meat with Lemon and Lime Juice, cover, and refrigerate for 1 hour to marinate.
- Squeeze any excess liquid from Alligator and place into a large bowl. Season with Salt, Pepper and Seasoning, then coat with flour. Remove Alligator, shake off excess flour, and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add Garlic; cook and stir until fragrant, about 30 seconds. Add Alligator, and cook until firm and opaque, 5 to 6 minutes. Add Cilantro and stir for 1 minute. Place Alligator into serving dish, then pour Wine into skillet and simmer until thickened, about 2 minutes. Pour sauce over Alligator to serve.
