Corned Beef Brisket

Nothing says Irish food like Corned beef and potatoes. For St Patty’s day this year, i made up 2 four pound Beef briskets and sliced them up real nice and thin. I’ve had more ruebens in the last 3 days than I have all year. But for the price, a cheap cut of meat like brisket can really be tenderized up by cooking it low and slow. The store had it on sale for about $2.50 a pound so I stocked up and between sides, sauerkraut, bread and meat, it cost me about $25 to make like 8 solid full meals. Not bad at all to help save some money for the Killian’s and Jameson.

Steak Butter

This butter goes perfect with a thick, grilled steak and even on the side smothered on some fresh biscuits. It has just a little bit of kick but a good herb flavor that gives a freshness to any grilled meat or fish. I “roasted” the garlic for this in the microwave. It just takes too long to fire up the oven and have it heat up the house for an hour and half for only a small batch. But you can cut the top of the head of garlic, lightly sprinkle on some oilive oil, kosher salt and fresh ground pepper. Microwave on about 70% power for about 5 minutes, test it after about 3. Once it’s done you can add it to a toaster oven on broil for 5 minutes or so to blacken the top, then you can use it just like normal, at a quarter of the time.

Homestyle Bacon Gravy

This weekend I was making breakfast and made biscuits, only because I had a tube that I wanted to get rid of. While I was making Bacon, I decided to go with a sausage gravy idea, so I whipped this up and it came out pretty good. it’s a really easy recipe and it was all stuff that I had anyways so it cost next to nothing for me to have breakfast and lunch.

Super Easy Broccoli Soup

I made this soup after coming across the video on youtube. It’s so easy it’s stupid and it makes for a good healthy lunch. I like broccoli but usually only when it’s stir fried in a sauce so I added a few things to mix it up. I threw in 3 cloves of garlic and about 1/3 of an onion to the broccoli as it boiled and then added that to the food processor. Also, Instead of drizzling the Olive Oil in the bowl I just added about a tablespoon to the blender as well so that it was mixed in. Instead of the walnuts and goat cheese, I just shredded some pepper jack cheese and then I used Sriracha to drizzle over at the end.
