Spicy Thai Noodles in Peanut Sauce

I had this sauce the other night and I was quite surprised with it. It’s a new flavor that really goes well with chicken, shrimp or vegetables. I made it with crushed red pepper but Thai chiles, I think, would be best and really give this a kick of heat.

  • 1 Cup Smooth Peanut Butter
  • 1/4 Cup Orange Juice
  • 1/4 Cup Soy Sauce
  • 1/4 Cup Sesame Oil
  • 3 Tbsp Rice Vinegar
  • 2 Tbsp Ginger
  • 2 Tbsp Garlic
  • 1 tsp Hot Pepper flakes
  • Green Onions for Garnish
  • Sesame Seeds for Garnish
  • 2 Cucumbers
  • 3 Carrots
  • 1 lb Spaghetti

  1. Mince the Garlic and Grate the Ginger, add to a large bowl and mix in all the ingredients.
  2. Boil some Spaghetti noodles.
  3. While noodles are boiling, slice the Cucumbers and Carrots into matchsticks and chop the Green Onions into rings.
  4. When the spaghetti is soft, drain and mix well with sauce, Cucmber and Carrot slices.
  5. Top dish with Sesame Seeds, Crushed Pepper Flakes and Green Onions.
