I had this sauce the other night and I was quite surprised with it. It’s a new flavor that really goes well with chicken, shrimp or vegetables. I made it with crushed red pepper but Thai chiles, I think, would be best and really give this a kick of heat.
Ingredients:
- 1 Cup Smooth Peanut Butter
- 1/4 Cup Orange Juice
- 1/4 Cup Soy Sauce
- 1/4 Cup Sesame Oil
- 3 Tbsp Rice Vinegar
- 2 Tbsp Ginger
- 2 Tbsp Garlic
- 1 tsp Hot Pepper flakes
- Green Onions for Garnish
- Sesame Seeds for Garnish
- 2 Cucumbers
- 3 Carrots
- 1 lb Spaghetti
Directions:
- Mince the Garlic and Grate the Ginger, add to a large bowl and mix in all the ingredients.
- Boil some Spaghetti noodles.
- While noodles are boiling, slice the Cucumbers and Carrots into matchsticks and chop the Green Onions into rings.
- When the spaghetti is soft, drain and mix well with sauce, Cucmber and Carrot slices.
- Top dish with Sesame Seeds, Crushed Pepper Flakes and Green Onions.
