Pulled Pork is just a great sandwich filler. You can make it spicy or sweet as you want. Leftovers are good for a week in the fridge and you can have sandwiches one day, throw it on top of rice for the next, make soup on the third and if there’s any left, you can add some cheddar cheese and eggs and make breakfast. Here’s an easy recipe you can start before work and finish up right when you get home.
- 3-4 lbs Boneless Pork Butt or Roast Loin or Pork Ribs
- 1 Can Beer (not Light)
- 1 Can Beef Broth
- 1 Head of Garlic (diced)
- 1 tsp Chili Powder
- 1 tsp Cheyenne Powder
- 1 tsp Onion Powder
- 1 tsp Pork Seasoning (or Brown Sugar)
- 1 Bottle BBQ Sauce
- Pour Beer, Beef Broth, Diced Garlic and Spices into slow cooker, and add Boneless Pork Ribs. Cook on High heat for 4 hours, or until meat shreds easily. Remove meat, and shred with two forks.
- Remove excess water/broth from slow cooker and re-add pork, cover with bottle of BBQ sauce and let simmer for another 30-60 minutes
