Marinated Garlic Salad

Here’s a super easy recipe for all you Garlic lovers out there. Marinated Garlic goes great on the side of Steaks / Chicken / Pork or vegetables. You can also add Hot Peppers to the jars as well. Jalapenos and some Chili powder for a southwest flavor, a few drops of Sesame Oil and a couple Thai Chiles for an Asian style or Scotch Bonnet peppers and a tsp of Allspice for a Jamaican Jerk style Garlic.

Ingredients:

  • 12 Heads Garlic
  • 2 Parts Olive oil
  • 1 Part Lemon Juice
  • Italian Seasoning

Directions:

  1. Peel all the Garlic, this should give you about 75-100 cloves.
  2. Bring a large saucepot of water to a boil. Add all the Garlic to the water. Let it boil for 3 minutes then remove Garlic clovesand drop them into a saucepot of cold water to keep them from “cooking”. Mix up the Olive Oil and Lemon Juice.
  3. Add the Garlic to sealable glass jars along with a few shakes of Salt and Italian Seasoning. Fill the jar up with the Oil / Lemon Juice mix.
  4. Put the jars in the back of the fridge and let marinate for at least a week.
