Hawaiian Pineapple Chicken StirFry

I whipped this up over the weekend to get rid of some Onions that I had left over from salsa.  It’s a quick, filling recipe that you can make for super cheap and using leftovers if you want.  Between the Chicken, Onions and Cans of Pineapple, it cost a total of about $6 to feed 3 big guys.

Ingredients:

  • Chicken Breast
  • Pineapple
  • Onions
  • Garlic
  • Oil
  • Soy Sauce
  • Salt and Pepper To Taste

Directions:

  1. Add Onions to a large skillet with Oil, Garlic, Splash of Soy Sauce. Let Onions cook down until they caramelize and turn translucent brown.
  2. Remove Onions and Place in bowl on the side, Fry the Chicken Breast in a little bit of Oil until just before they Golden Brown, Add pineapple chunks and Stir Fry for 1-2 minutes over Hi Heat, Add Onions and Stir Fry another minute or two.
  3. Serve On top of Rice or by itself.
