Garden Grilled Mushrooms

With all the farmers markets and sales on veggies during the summer, these are a great snack to fill you up but still keep it lighter.  They’re also perfect since with all the vegetables, you can eat 2 lbs worth and it’s only 10 grams of Fat and low in carbs and calories so you can drink as you snack and still not pack on as much as a big mac meal.

Ingredients

  • 1/3 cup Green Pepper
  • 1/3 cup Red Pepper
  • 1/3 cup Yellow Pepper
  • 1/3 cup Red Onion
  • 2-3 Green Garden Onions
  • 1/3 cup Green Olives
  • 2-3 cloves Garlic
  • 1/4 cup Fresh Basil
  • 1/4 cup Fresh Cilantro
  • 2 Tbsp Melted Butter
  • 2 Tbsp Italian Dressing
  • 1 cup shredded Romano or Romano & Parmesan Mix Cheese
  • Salt and Pepper
  • 1-2 lbs Button Mushrooms

Directions

  1. Pre-heat grill to low or oven to 350F. De-stem Mushrooms and place in mixing bowl, sprinkle with oil and toss around to coat evenly. Dice all other vegetables and herbs, or you can use a food processor. Save a sprinkling of basil for garnish.
  2. Thoroughly Mix Seasonings, Vegetables, Cheese, Butter and Italian Dressing and scoop into Mushrooms.
  3. Grill 15-20 minutes or Bake about 20 minutes, give or take depending on size of mushrooms, or until tender. Sprinkle with Basil and Extra Cheese and serve.
