French Toast Breakfast Casserole

Looking up breakfast casseroles online, this one stood out as a super easy dish that can be whipped up the night before. It makes about enough for about 2 days of breakfast for 3 people.


  • 1 Loaf  of French Bread
  • 8 Eggs
  • 3 Cups Milk
  • 2 Tbsp Sugar
  • s Tbsp Cinnamon
  • 1 tsp Nutmeg
  • 1 tsp Vanilla Extract


  1. Slice or rip the bread into about 1 inch pieces and layer the bottom of a greased casserole dish.
  2. In a separate bowl, whisk up the Eggs, Milk, Cinnamon, Nutmeg, Sugar and Vanilla Extract. Pour over the bread and cover with foil.
  3. Bake in a 350 degree oven for about 30-45 minutes, until the bread puffs up.
  4. It’s best to prep this up the night before and then throw in the oven as you’re getting ready in the morning.
