Firey Tequila Steak Marinade

This marinade is perfect for tequila and beer Saturdays. Thinly sliced Skirt or Flank steak, when allowed to marinate for 2 nights, will practically flake at the fork after you throw it on the grill for a few minutes. You can also use it to marinate chicken for great Pollo Asado burritos. If you save some of the marinade, it makes for a great baste while the meat is grilling.



  • 3 Habaneros
  • 3 Cloves Garlic
  • 1/4 Cup Vegetable Oil
  • 1/4 Cup Tequila
  • 1/4 Cup Lime Juice
  • 2 Tbsp Sea Salt
  • 1 Tbsp Ground Black Pepper
  • 1 Tbsp Cumin
  • 1 Tbsp Oregano
  • 1 Tbsp Fresh Cilantro
  • 1 Tbsp Brown Mustard
  • 1 tsp Grated Lime Zest



  1.  Saute the Habaneros for about 3 minutes in a pan over high heat, add in the garlic and cook for another 2 minutes.
  2. Add Habaneros, Garlic, Cilantro and Oil in food processors, blend until smooth.
  3. Pour into a large bowl and whisk in the rest of the ingredients. This lasts about a week if it’s covered and in the refrigerator.
