Cucumber Dill Dip

Since the store had a “2 for a buck” special on cucumbers, I bought a few bucks worth and made up this dip. This goes great with sliced cucumbers, carrots and Rosemary Triscuts. It’s Depending on how you like it, you can just finely dice the cucumbers for a thicker dip or, I used a food processor and added the cucumber and ranch and it made it more consistent in texture. It will stay good for about 3 days in the fridge.

Ingredients:

  • 1 Medium to Large size Cucumber (1 Cup worth when diced)
  • 1 Cup Ranch
  • 1 Cup Mayonaise
  • 2 tsp Dill
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Parsley
  • Salt and Pepper to taste

Directions:

Mix all ingredients together and allow to sit in the fridge for about 20 minutes for the flavors to blend together. Keep cold as it will taste off if it gets warm for more than an hour.
