Bacon Wrapped Stuffed Onions

I seen a lady on Good Morning America with a recipe for Bacon Wrapped Onions on the grill and I couldn’t pass these up. It’s such a simple recipe and you can really add any flavors you like to go with what you’re cooking. Mix up some Soy Sauce, Wasabi and Sesame Oil in the butter to make a great side for Teriyaki Chicken or Ginger Lime Salmon.  You can add some minced Garlic and Basil/Oregano for an Italian style that goes great with Sausage on the grill.

Core them but leave a bottom to the bowl.

Directions:

It’s so easy, anyone can do it. Take about 6-12 Sweet Vidalia Onions and cut out the core, almost to the bottom, leave some at the bottom so it’s a nice size bowl. Wrap the Onion in Bacon, it takes 2-3 pieces for each Onion, but don’t overlap too much then secure with a toothpick. Fill the cavity with butter and your favorite seasonings.

Cook these badboys on a grill on medium heat until the Bacon is cooked. You can also cook these in the oven at 350 for about an hour with the last few minutes on broil to crisp up the Bacon. Let rest for a minute before serving so the Onion doesn’t fall completely apart then serve.
