  • 1 tsp Baking Soda
  • 1/2 stick Butter
  • 1/2 of an Onion (sweet vidalia)
  • 2 – 4 cloves Garlic
  • 1 Green Pepper
  • 1 – 3 Jalapenos
  • 2 – 3 stalks Green Onion
  • 1 stalk Celery
  • 1 tsp Worcestershire Sauce
  • 1 – 3 Tbsp Louisiana Hot Sauce
  • 1 tsp Brown Mustard
  • 1 tsp Cheyenne Pepper Powder
  • 1 tsp Thyme
  • 1 tsp Oregano
  • 1/2 tsp Paprika
  • Salt and Pepper to taste

  1. Finely dice all vegetables and add to large bowl. Begin mixing in all other ingredients until they are blended thoroughly until you have a thicker batter.
  2. After batter is mixed, add Alligator meat and turn gently so that it doesn’t crush the pieces of meat. Using a tablespoon, drop heavy scoops into hot oil and fry in small batches until golden brown. Drain off excess grease and serve.
