Adobo Chicken

Adobo is the name of a popular dish and cooking process in Philippine cuisine that involves meat or seafood marinated in a sauce of vinegar and garlic, browned in oil, and simmered in the marinade. You can replace the chicken with any type of meat or protein if you want to switch it up, but Chicken is the most frequent one that you’ll see cooked in this manner.

Ingredients:

  • 5 lb Chicken Breast
  • 1/2 Cup White Vinegar
  • 1/2 Cup Soy Sauce
  • 1-2 Heads Garlic (1/4 cup minced)
  • 1 Tbsp Fresh Ground Black Pepper
  • 2-4 BayLeaves

Directions:

  1. Lightly saute Chicken Breast until they just start turning Golden Brown,  Remove and pat off excess oil.
  2. Add all ingredients to a large sauce pot, Simmer while covered for 20-30 minutes, then remove cover an allow to simmer 15-20 minutes until sauce is reduced.
